Christmas Cake

Holiday season is all about having a good time with family, friends and neighbors. Be it a Thanksgiving party, Christmas party or a Halloween party, the delicacies are an important part of the holiday season. They make most of the occasions more fun and memorable. Without a tasty menu, filled with mouth-watering items, partie lacks their charm. So, what are you planning for your menu this holiday season? If you are looking for some ideas for special Christmas cake, here we go:

Black Rum Cake

Following are the ingredients you will need to prepare black rum cake:

Preparation

First you need to grind raisins, currants, prunes and nuts. Mix the chopped mixture with 6 ounces of rum and wine, each and leave it to soak for 24 hours.

Before you proceed with further preparation, keep the oven ready by heating to 300 degrees F, along with a greased and floured baking pan.

Then melt 1 pound dark brown sugar and whip that melted sugar and butter or margarine, adding eggs, one at a time. Add the rum-soaked raisin mixture and caramel, mix it well. Then add the flour, baking powder and cinnamon and mix to a soft dropping consistency. Pour it into the prepared greased pan, bake for 2 hours in the pre-heated oven. After 2 hours, remove it from oven and pour remaining rum and wine over the cake. Your black rum cake is ready. You can keep it for up to 12 months.

Gingerbread Cheesecake

Ingredients:

Preparation

Heat the oven to 350 degrees F and keep a baking pan ready.

Take a bowl and beat the cream cheese in it for 3 minutes. Then in an electronic mixer beat the vanilla extract, add two of the eggs, at a time and beat it until it becomes thoroughly blended. Gradually add the granulated sugar and again beat it until the mixer is light and fluffy, say for 3 minutes. Once it is done, keep it aside.

After that, heat the molasses in a saucepan over low heat until bubbles begin to form around the sides. Then remove it from the heat and stir in the butter, 1 teaspoon at a time. Now, stir molasses in ginger, cinnamon, nutmeg, cloves and salt. Add brown sugar into the mixture and beat it with a wooden spoon until it becomes completely smooth. Let it cool to room temperature.

Beat the remaining 2 eggs into the gingerbread batter, one at a time. Then stir it in the baking soda and beat in the flour in 3 batches. Using a tablespoon, drop half of the gingerbread batter in the prepared pan. Use one fourth of the cream cheese mixture to fill in the empty spaces. Again, drop the remaining gingerbread batter on top of the cream cheese mixture. Repeat the same topping with cream cheese. Then put it into the oven and bake for 50 minutes or until the top of the cake begins to crack. Let it cool to room temperature, cover it and then put in the refrigerator. Serve your gingerbread cheesecake chilled!
