Dessert:
Vanilla delight:
You will require:
- 1 box vanilla wafers
- 1 cup chopped pecans
- 1 can condensed milk
- 1 1/2 cup confectioners sugar
- 1/2 cup cherries (optional)
Directions:
- Crumble all the vanilla wafers.
- Add around 3/4 cup confectioners sugar, pecans and milk.
- Mix them together, but make sure that the texture should be sticky.
- Add lots of cherries, if desired.
- Roll into log and use remaining confectioners sugar to roll logs in.
- Wrap in wax paper and refrigerate.
- It is ready!
I would like to tell you that this particular recipe comes under the category of “Children’s most favorite dishes.” I know that now you will surely prepare it…
Chocolate cake:
You will require:
- 2/3 c. sifted cake flour
- 1/3 c. unsweetened cocoa
- 1 1/2 c. sugar, divided
- 12 large egg whites
- 1 1/2 teaspoon vanilla extract
- 1 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
Directions:
- Preheat oven to 375 degrees.
- Sift flour, cocoa, and 3/4 cup sugar together three times; and keep the mixture aside.
- Beat egg whites, but make sure that the procedure happens at a low speed. Beat them in a large mixer bowl until foamy, for about 5 minutes.
- Add vanilla, cream of tartar as well a pinch of salt. Now enhance the speed to medium, while beating the remaining sugar, 1 tablespoon at a time, for 5 minutes.
- When sugar is mixed well, continue beating to stiff peaks, for 2 minutes or more.
- Fold one-third of the dry ingredients over whites.
- Repeat the same procedure two more times until they are blended perfectly.
- Now you can pour the batter into ungreased 10-inch tube pan.
- Cut through batter.
- Bake the cake for 40-45 minutes, until the spring of the top layer backs when gently pressed with fingertip.
- Invert pan onto funnel to cool down.
- Remove from pan.
- This cake is absolutely fat free. Add powdered sugar or decorate it in your own way.
Now it is time for some Christmas recipes:
I would like to tell you my favorite recipe… it is called PASTA! Yummy…
You will require:
- 250g of pasta
- 250g of asparagus spears
- 4 slices of pancetta
- Lots of fresh mint leaves
- 100ml of olive oil
- 50g grated Parmesan
- 2 eggs
Directions:
- First step is to cook the pasta in plenty of boiling water until it is cooked properly, or according to packet instructions.
- Now to make it more interesting, you can add 250g asparagus spears to the boiling pasta water in the last minute boiling process.
- you can grill 4 slices pancetta until crisp, side by side.
- Put the mint leaves in a grinder along with 100ml olive oil, and make a puree. Stir in 50g grated Parmesan, lots of black pepper and keep the mixture aside.
- Poach 2 eggs for at least 24 minutes in water.
Now drain the pasta and mix it well in the mint pesto. Serve the pasta in plates. Sprinkle the left over ingredients on the top and then lift out the poached eggs with a slotted spoon and place it on the top of the pasta. It is ready…
